Crunchy & savory fried powder dough ratio

    Powder 100g + Water 115g
    Powder 200g + Water 230g

(Please measure using an electronic scale, not measuring cups)

Adjust the quantity as needed based on concentration.

It's best not to prepare too much dough at once. Prepare only the amount needed each time.

If you're not using the leftover dough immediately, cover and store it in the refrigerator. Especially in summer, it's best to prepare only the amount needed.

Crunchy & savory Fried Powder is used for water-based dough. Adjust usage based on dough concentration for differences in crispiness and color.

Place appropriately sized pieces of chicken into the prepared dough, mix well, then fry in a fryer.

Before coating with powder, it's recommended to make vertical cuts into the chicken thighs.

Frying temperature should be around 170°C using a Rinnai gas fryer.

Frying times:

    10-piece chicken: 10 minutes
    9-piece chicken: 9 minutes
    8-piece chicken: 8 minutes

Start with larger, thicker pieces like chicken legs or thighs, and add smaller pieces like wings last.

Since it takes approximately 2-3 minutes to add all pieces from the first to the last, when frying a 10-piece chicken, after adding all pieces, fry for about 7-8 minutes to achieve a total frying time of around 10 minutes.
